How to Make Gravy from Corned Beef Drippings

The juices from the corned beef in the slow cooker are going to very savory and rich. What I like to do is first skim off some of the excess fat from the broth and then make a slurry of corn starch and water and add it to the broth stirring constantly until it begins to thicken ( over medium high heat). Then you have a simple hearty gravy.
Another way to make nice gravy is to pour off the drippings into a saucepan and stir in some flour to make a simple roux. Cook the roux over medium heat for a few minutes and pour some beef broth into it. Turn up the heat and stir the gravy until it reaches a consistency you like. there you have it--corned beef drippings gravy, hot and ready to go on your beef and side dishes.
