Potatoes O'Brien- a favorite Irish Dish


Dia duit chara! That's Gaelic for hello,Friend! Let's learn how to make a couple of delicious potato dishes in honor of St.Patrick's Day coming soon.

Although the true history of potatoes O'Brien is a little obscure it is often associated with Irish culture and is thought to have first been served in restaurants in Boston and New York around the turn of the 20th Century. Perhaps the dish is a tribute honoring the courage of the Irish people living during the Great Potato Famine.


How to make potatoes O'Brien

This is my version of potatoes O'Brien and I hope you like it as much as we do.

First get a 12 inch cast iron skillet.
Next get these ingredients:

  1. 4 large potatoes ( I prefer russet or Idaho Baking potatoes)
  2. 1 medium onion diced
  3. 1/2 cup diced ham
  4. 1/4 cup pimentos
  5. salt & coarse black pepper
  6. 2 T fresh basil chopped
  7. 3 T oil

Wash and peel the potatoes. Cut into 1/2 inch cubes and pat dry with paper towels. Pour oil into preheated cast iron skillet and add potatoes.

Cook stirring frequently with a spatula for a bout 4 minutes. Add onions, ham and pimentos and sprinke lightly with salt and pepper. Continue cooking until potatoes are lightly browned on all sides.

Sprinkle fresh basil on top and gently stir it in. Now , Place the pan into a pre heated 400 degree oven for about 15 minutes. Remove and serve as a side dish with any entree.

If Potatoes O'Brien aren't to your taste try these

Here's a favorite recipe of mine because it's so easy and everyone loves it. You will need a bout 2 pounds of redskin potatoes cut into quarters. Was them thoroughly and pat dry with paper towel.

Next place the potatoes into a large bowl and coat with 1/4 cup oil. Then open a bag of seasoned bread crumbs from the grocery store. ( I like Shake & Bake but you can use whatever flavor you like.) Mix crumbs and oiled potatoes thoroughly and bake on parchment lined sheet pan for 35 minutes. Serve right away and watch them disappear!
