Ever since the 1700's people have gathered together to enjoy good food and fellowship. During the colonial days it was often the only way to get a hot meal and as prosperity grew the people kept on meeting to cook and eat just because it was fun.
Often the meeting place was on the church grounds and that's where the tradition of dinner on the ground started. Made you look forward to Sunday, didn't it?
As time went by local politicians took note of these gatherings and began to have cook outs as a way of canvassing voters.This worked remarkably well as the folk were fed and often a little drunk.
This disposed them to be a little more favorable when it came time for speech giving and vote begging. Even today you can find hot dog and chicken BBQ cook outs hosted by vote stealers of every stripe.
The Best Southern BBQ Supper
Let's talk real Southern style BBQ. You gotta start with a pig. Down here in Tennessee pulled pork BBQ is king and we have BBQ places all over the state serving it up hot and fresh!
Slow cooked over hickory wood fire until it falls off the bone and served with the best side dishes like hot slaw and baked beans or macaroni. Makes my mouth water just thinking about it!

The oven method
Here's how to do it. First you need a pork loin (about 3-5 lb). Pat the meat very dry with paper towels and coat liberally with a dry rub.
dry rub mixture:
- 3 T black pepper
- 2T kosher salt
- 3 T paprika
- 3 T dark brown sugar
- 1 Tsp cayenne pepper
- 1/4 tsp ground ginger
Get a medium sized roasting pan and put 2 cups apple juice, 2 T Liquid Smoke and 2 medium sized granny smith apples cut into sliced on the bottom of the roaster. Place a wire rack on top and put seasoned pork loin on the rack. Cover with foil and put in a 275 degree oven for 2 hours. The meat is done when it reaches an internal temp of 170F and it should be tender enough to pull apart with a fork. Since all ovens vary you may have to cook it for another 30-45 minutes to get it fork tender.
After the porkis done take it out of the oven and let it sit with the foil tented loosely over it for about 30 minutes. After 30minutes the pork will pull apart with your fingers very easily and you will have restaurant quality pulled pork BBQ your family and guests will love.
The Slow Cooker Method
Now we come to the way I like to make easy pulled pork BBQ. I like it cause it is so simple that it's not even like working and the results are awesome.
Take your pork loin and dry it well. Heat up your cast iron skillet and brown the pork on all sides to lock in the flavor. Take it off the fire and set it aside for a minute. Into your crock pot pour 2 cups apple juice and 2T liquid smoke. (You can find liquid smoke in the supermarket) Place the pork into the cooker and cook on low overnight. In the morning just take the meat out and pull apart to serve. There you have it, easy pulled pork BBQ that your guests will swear came from a restaurant!
Serving Suggestions
This dish is great served on kaiser rolls or onion rolls with hot slaw or cole slaw and sides such as baked beans or macaroni.
